As a chef and food consultant Tom brings a fresh eye and experienced worldview to any food development brief. His contemporary method of balancing taste and flavour is quite unique, resulting in vibrant three-dimensional food. He is an acclaimed advocate on all aspects of Sustainable Seafood, organic, seasonal and sustainable produce.
He has a willingness to share knowledge about world food and current trends, keeping him on the cutting edge of the industry. He expands the learning and experiences of everyone he works with by creating delicious, everyday approachable food, from his travels.
Tom has had years of experience working directly with leading supermarkets and their suppliers. He works to inspire their teams and keep them being innovative with their new product development. He infuses their food with the latest trends and tastes from the markets and street stalls of the world.
In 2012 Tom will arrange and lead a trip of top UK supermarket suppliers and food developers to Singapore and Vietnam. He will introduce them to the diverse world of Asian street food with a view to creating new product ranges. He has also lead similar inspirational tours to Thailand, Penang, Hong Kong Italy and France. Tom also filmed with Rick Stein in Vietnam showing him the street food of Hanoi for his BBC ‘Asian Odyssey’ series.
Tom Has created numerous ranges of food, and led presentations with supermarkets such as Marks and Spencer, Waitrose and Tescos. He has worked on many of the Marks and Spencer’s Cook ranges, developed a Thai range for Tescos. He has worked on briefs specifically tailored to healthy eating, including a range of sandwiches developed for the UK pharmaceutical chain Boots, called Boots Shapers.
Tom has run specialist flavour workshops for the UK supermarket Waitrose, Campbell’s, Baxter’s food group, Schwartz, and other international companies in the food industry.
He has tailor made recipes from his travels for large and small-scale manufacturers who supply much of the prepared food that is sold in supermarkets across the UK and Europe.
Other projects have been presented to companies such as Hain Europe covering the areas of healthy snacks specifically sourced from the world of street food.
As a food consultant Tom is familiar with the procedure of new product development, able to take ideas all the way through to mass manufacture.
He is perfectly suited to work with fast food or high-end restaurants of all calibers and sizes. Taking them to a totally different level with confidence, and ease.
He recently brought some of his award winning street food recipes and his concept of balancing flavours to a group of London Restaurants whose identity specializes in food from the Silk Road.
As a chef Tom loves to teach any one who loves food and cooking, whether on TV, in hands on cooking schools or demonstrations. He has a vast experience presenting on all styles of cooking. He covers cuisines and styles as varied as Italian, Middle Eastern, Mediterranean Central, Southern and South East Asian.
